Breakfast of champions: Malala Yousafzai’s chapatis with fried eggs

Serves fourSift 400g chapati flour into a large bowl. Gradually add up to 200ml water until you have a smooth, firm dough – you may not need all the water. Knead until soft and slightly elastic. Divide in half and continue dividing until each piece is the size of a large marble. Flour a work surface and roll each piece to about 2mm thick and 10-15cm in diameter. Heat a shallow frying pan until hot (don’t add any fat) and cook one chapati until small brown spots appear on the bottom – about 30 seconds. Flip and cook the other side, remove, and keep warm while you cook the rest. To serve, spread each with a little butter; top with a fried egg. |
