A police spokesman said officers were called to Hamilton and Inches on George Street after the robbery at about 11:30 on Friday. Staff were threatened with a knife and special tools were used to smash open display cabinets during the robbery at Hamilton and Inches on George Street.
It is understood a number of men entered the premises armed with bladed weapons. It happened at about 11:30. Three men were involved, with a fourth man driving a white BMW in which the gang fled the scene.
After stealing an amount of jewellery from the shop they men fled in a white BMW. Police described the raid as a "violent robbery" and appealed for witnesses.
Police urged anybody with information to contact them. The suspects were seen driving east along George Street, down Howe Street and along Heriot Row, after the incident.
The car was recovered by police a short time later and was being forensically examined.
Det Insp Carol Craig, who is leading the investigation, said: "We are currently investigating this violent robbery, which put several people in a state of fear and alarm, and I would appeal for anyone who witnessed this incident and has not already spoken to us to contact Police Scotland on 101 or through Crimestoppers on 0800 555 11."
